With its serene citric sweetness, Bookkisa Washed from Guji Province is a mellow classic. As devotees of processor Sookoo Coffee’s fantastic natural lots from sub-kebeles like Bookkisa, Shoondhisa, and Daanisa, we immediately bought in when we learned that owner Ture Waji had produced his first ever washed lots this harvest season. For this selection, Sookoo purchases cherries from farmers in the Bookkisa kebele of Shakiso, Guji Zone. After removing all coffee pulp with a Penagos demucilager, Sookoo ferments the demucilaged parchment for twelve hours before washing and moving to drying beds. This first year of production balances caramel-like texture with sweet acidity reminiscent of yellow plum. We are delighted to share with you this new chapter for Sookoo Coffee, one of Ethiopia’s finest processors. A friendly filter with peach and honey notes, Bookkisa Washed will light up your cup!
