This purchase marks the first step in a new collaboration with Tropiq's Colombian buyer, Enki Súarez, and exporters, San Martín. An emerging exporting company owned by the Henao family, San Martín operates purchasing points and warehouses in Nariño, Cauca, and Huila. And this is where the fun starts. David Gomez, the producer of El Plan, is the neighbour and father of Yhon David Gomez, the producer of El Trapiche, one of the current filters in the shop. Although these two farms are so close together in location, you'll be amazed by the difference in flavour caused by a variation in processing. Whereas Yhon David, leaning toward the current trend of carbonic maceration, allows an extra day of in-cherry fermentation on El Trapiche, David Gomez employs an extra day for dry tank fermentation.
